Microwave Masala Peanuts

Peanuts especially the deep fried masala ones have always been a favourite in our family. But I rarely used to buy them because of their high calorie content. Microwave masala peanuts is a healthier version of the deep fried ones that you normally get at the bakers and grocers. Since its made in microwave with absolutely zero oil, its less in calories too. This was introduced to me by my Dear Mom in Law. An expert cook especially in Konkani dishes and snacks. I have a learnt a lot from her. Her determination and dedication is what I admire the most. It gives me immense pleasure to share another innovative recipe of hers. 

Peanuts are said to be rich in mono unsaturated fats, the type of fats that is said to be Heart - Healthy. Peanuts are also said to be rich in nutrients like Vitamin E, Folate and Protein. Since its high in calories care should be taken to eat them in moderation.


Ingredients:

Peanuts - 1/2 kilo
Kashmiri chilli powder - 2 tbsp
Asafoetida (Hing) - 1/2 tsp
Besan ( chick pea flour) - 3 tbsp
Salt to taste
Method:
  • Wash peanuts well under running water and drain them well.
  • Add kashmiri chilli powder, asafoetida and salt.
  • Mix well and keep aside covered for 1- 2 hours
  • After couple of hours add the besan and mix well.
  • Keep it in the microwave on high until its done. 
  • Keep mixing them after every two minutes otherwise there are chances that they might not get uniformly roasted.
  • The time of cooking depends on the power of the microwave.
  • Mine were done in 7 minutes.

  • Once you feel the peanuts have lost their moisture and have started becoming hard remove them from the microwave.
  •  By then the coating would have also started getting browned.
  • You might feel that they are soft but they will get the right crunchiness once they cool down.
  • Hot and crunchy masala peanuts are ready to be popped into your mouth. Now what you need is a hot cup of tea as accompaniment.

Note:
  • I have used kashmiri chilli powder. if you are using the normal chilli powder please alter the quantity accordingly.
