A dessert with the King Of Fruits is always welcome and with last few lots of this season mangoes coming in, something special had to be made. Just then my dear friend Jayshri Baleri Queen of Bakes And Desserts as we call her came up with an post of mango vanilla pudding with mango rossetes. The entire dish was so attractive that it went viral in our food group. The viral caught on to me too and i decided to bid farewell to mangoes with this simple and yummillicious dessert. My kids just loved it and the glasses were polished in no time!! Please follow the link given in the Notes section for a demo on how to make mango rosettes.
Ingredients:
Servings: 2 glasses,similar to the ones shown in the picture
Custard Powder - 2 tbsp (vanilla flavour)
Milk - 1/2 litre
Sugar - 2 rounded tbsp
Mangoes - 3 big
Method:
- Take 1/2 litre milk in a saucepan.
- Take a small bowl with 2 tbsp of custard powder. Pour in 2 1/2 tbsp of milk from the saucepan on the custard powder and mix well to form a smooth paste without any lumps.
- Boil the rest of the milk with sugar. Keep stirring so that the sugar gets dissolved.
- Just as it begins to boil, mix in the custard powder and stir well continuously until the mixture thickens. Do not stop stirring,if you do so you will get a lumpy custard.
- Keep aside and once it cools down let it chill in the refrigerator.
- Meanwhile take two mangoes, peel them and make a thick puree and refrigerate that also.
- As the custard is chilling you can make mango rosettes with the remaining one mango. Please follow the link for the demo on mango rosettes given in the Notes section.
- If you are unable to make the rosettes, just serve it with chopped mango pieces.
- After 2 hours start layering the pudding in stemmed or normal glasses.
- Pour in 3- 4 tbsp of custard for the first layer. This depends on the size of the glass.
- Gently add 3-4 tbsps of mango puree on the custard layer.
- Finally top it up with another layer of custard.
- Garnish with mango rosette or pieces and mint leaves
- Serve chilled and enjoy this lip smacking dessert.

- You can even layer them in a slanting way i.e One slanting layer of custard covering half the glass and the other slanting layer of mango puree beside that.
- You can alter the quantity of sugar as per your liking.
- You can even add sugar to the mango puree if its not sweet.
