Kids are always attracted to subzi/ vegetable rolls. These rolls are a complete meal and can be made with any vegetable and any kind of sauce. My elder daughter loves spicy food. So i tried out these rolls with some left over cabbage subzi and homemade mildly spiced lemon,ginger and green chilli pickle. She just loved them.I had packed these in her tiffin to school and her friends loved them too.
Ingredients:
Servings : 4 medium sized rolls
For the subzi:
Cabbage - 1/2 of a small cabbage thinly sliced
Onion- 1 medium chopped
Tomato - 1 medium chopped
Ginger garlic paste - 1 tsp
Jeera - 1/2 tsp
Saunf - 1/2 tsp
Haldi powder - a pinch
Garam masala - 1/2 tsp
Coriander powder - 1 tsp
Kashmiri Chilli powder - 1/2 tsp (optional)
Oil - 1 tbsp
Salt - to taste
Ghee - as required ( optional)
Ghee - as required ( optional)
Coriander leaves chopped - for garnish.
For the rotis:
Wheat flour - 1/2 cup
Water - as required
Salt - to taste
For the spread:
You can use any pickle of your choice.
Here I have used homemade lemon, ginger and chilli pickle.
Method :
- Take the wheat flour in a bowl, mix water and salt and knead into a firm dough.
- Let it rest for 20 mins.
- Meanwhile take a pan, heat oil, add jeera and saunf.
- When they crackle add ginger garlic paste and fry for a few seconds.
- Now stir in the chopped onions and fry till translucent.
- Drop in the chopped tomatoes and fry till they become supple.
- Add the coriander, haldi, chilli and garam masala powders and fry well.
- Then add the cabaage and salt, give a stir, cover and cook for 5 mins.
- Do not over cook the cabbage. Keep it crunchy.
- Garnish with coriander leaves.
For the rolls:
- Knead the rested dough again.
- Pinch out small balls and roll into medium sized rotis.
- Fry them one by one on a tava.
- One side of the roti should be fried till fully done and the other side fried till its almost done.
- Now take the fried roti one by one and place it on plate with the side that is fully done facing the top.
- Apply 1/2 tsp of ghee all over the roti.
- Drop 1/2 tsp of pickle on the roti and spread well.
- Then take 1 large spoon of the subzi, place it on the achaar base and spread well.
- Roll the roti into a tight cylindrical shape.
- Place this roll on the tava and fry well on both sides.
- Serve these hot achaari rolls with tomato sauce.
Note:
- If your child does not prefer pickle or spicy food, then you can skip the achaar and use tomato ketchup instead.
- When you use ketchup,replace ghee with butter.
- Care should be taken while adding salt in the subzi because pickle, other than homemade is normally very salty.
