Sooji/ Rava/Semolina Dhokla, very popular in Gujarati households, is one of the healthiest snack. Since its steamed, it is low in calories. Very filling and a complete meal. An excellent snack idea especially for school/office tiffins, weight watchers and diabetic patients. I surfed through many dhokla recipes, combined them with a few of my variations and came up with this final product. Hope you all like it!!

Servings - 15 medium pieces
Sooji/Rava - 1 Cup ( I used roasted)
Sour Yogurt/ Curd- 1/2 cup well beaten
Green Chillies - 3 chopped
Ginger - 1" piece chopped finely
Jeera - 1/2 tsp crushed
Oil - 1 tsp (optional)
Eno (fruit salt) - 1 tsp
Lemon juice - 1 1/2 tsp
Water - 1/2 - 3/4 cup
Coriander leaves - 1 tsp chopped
Mint leaves - 1/2 tsp chopped
Seasoning:
Oil - 1 tbsp
Mustard Seeds - 1 tsp
Jeera - 1 tsp
Chillies - Non spicy ones Shallow fried
Coriander leaves - Chopped for garnish
Method:
- Take sooji in a bowl, add 1 tsp of oil and crushed jeera.
 - Mix well so that no lumps are formed.
 - Take another bowl add the beaten yogurt, chopped green chillies and ginger, coriander and mint leaves, salt, lemon juice and mix well.
 
- Add this to the semolina mixture along with 1/2 cup water and mix well.
 - Batter should be thick pouring consistency.
 - Let this rest for 15 -20 minutes.
 
- Take water in a steamer and boil it. When it boils turn down the flame to medium.
 - Add eno to the rested batter and mix gently. You will see the batter foaming up.
 - Take a greased dhokla plate or any other deep plate and pour in the batter.
 - Pat it so that the batter spreads uniformly.
 - Steam for 15 minutes. Check with a fork if it comes out clean the dhokla is done, else keep it for another 5 mins.
 - Take a small seasoning pan, heat oil, add mustard seeds and jeera.
 - When they crackle pour on the dhokla and cut into desired shapes and serve with a hot cup of tea.
 - To shallow fry the chillies,sprinkle salt on them and fry them in 1/2 tsp oil till they change colour ( see the above pic)
 - Spread these on the dhokla. They taste delicious.
 
Note:
- Do not rest batter for long else it will dry up and dokhla will not fluff.
 - Best served with a mix of green and tamarind chutney.
 - You can add a pinch of turmeric to the batter if you want it to look yellow.
 - Use roasted rava for best results.
