Have left over rice in the refrigerator? This recipe is perfect then. I make this on those lazy days when you just don't feel like cooking. This one gets over in a jiffy. It is spicy,tangy and delish. Its like a normal tomato rice but with a small twist. Do try it and let me know how it is .
Ingredients:
Servings: 4
Cooked rice - 2 cups
Tomatoes - 5 medium chopped
Fresh/Frozen Peas - 1/2 cup boiled
Onions - 2 nos thinly sliced
Garlic - 3 pods chopped
Ginger - 1" piece chopped
Pudina leaves - 1 tsp chopped
Coriander leaves - 1 tsp chopped
Rasam powder - 2 tsp
Haldi - 1/2 tsp
Pepper - 1/2 tsp crushed
Salt - To taste
Seasoning:
Mustard seeds - 1 tsp
Jeera - 1/2 tsp
Urad dal -1 tsp
Channa dal - 1/2 tsp
Hing - a pinch
Oil - 2 tsp
Method:
- Heat oil in a pan, add mustard seeds, jeera, once they crackle add hing,urad and chana dals and fry till they lightly brown.
- Now add the sliced onions, garlic and ginger and fry till it turns golden brown.
- Add the chopped tomatoes, salt and fry till they turn supple.
- Add the haldi, rasam and chilli powders and fry.
- Drop in the boiled peas and stir well.
- Add in the crushed pepper.
- Once the mixture becomes dry, check for salt and add the cooked rice.
- Mix well but care should be taken not to over mix, this will cause the rice to break.
- Garnish with coriander and pudina leaves.
- Rice is ready to serve
Note:
- If you don't have leftover rice then you can cook fresh rice and make. But care should be taken not to overcook it.
- Use ripe tomatoes.
- You can skip adding pudina if you don't prefer it.
- Completely dry the mixture before adding the rice otherwise the rice will become mushy.
