Whole Wheat Pizza

Pizza, A favourite of almost everyone...An Italian delicacy and is made with different sauces and toppings. Normally pizza bases are made of maida / refined flour. But this one that I have made is one with a whole wheat base. The base recipe is adapted from one of my fav chefs legendary late Tarla Dalaji. I am an ardent follower of her website and love all her recipes. Hope you like this one too. The sauce is my own creation. Hope you will all like it. Please do try and give your feedback.

Ingredients:
Servings: 2 pizzas
For The base:
Whole wheat flour - 2 cups
Dried yeast - 1 tsp
Warm water - 1 tbsp
Sugar - 1 tsp
Olive - 2 tbsp
Salt - as per taste
For the sauce:
Onion - 1 small chopped
Tomato - 2 big blanced and chopped
Garlic - 6 pods chopped
Tomato puree - 1/2 cup
Tomato ketchup - 2 tsp
Olive oil - 1 tbsp
Red chilli flakes -  2 tsp
Dry Oregano - 1 tsp
Dry basil - 1 tsp (optional)
Salt - as per taste
For topping:
Mushrooms - 10 nos thinly sliced
Capsicum - 2 diced
( I used half each of red,yellow,orange & green)
Onion - 1 big diced
(I used white onion)
Olives sliced - 1/2 cup
Pepper powder - 1 tsp
Mozzarella cheese - as per requirement
Method:
  • To make the base, Take wheat flour in a bowl.
  • Make a small depression in the centre of the flour ad add yeast and 1 tbsp water.
  • Cover with a small bowl and leave aside for 5 mins so that the yeast foams up.
  • After 10 minutes,add sugar,salt,olive oil and knead into a firm dough adding as much water as required.
  • Cover with a wet towel and set aside for 15-20 minutes till it doubles in volume.
  • While its resting let us make the sauce and get the veggies ready.
  • I steam the mushrooms and capsicum for a few minutes before use.
  • Take a pan and add olive oil, chopped onions and garlic and fry well.
  • Add the boiled and chopped tomatoes, ketchup,tomato puree and cook well.
  • Add salt, red chilli flakes, oregano and basil and boil for a few seconds.
  • Switch off flame, the sauce is ready.
  • After 20 minutes, remove the towel and punch down the dough to remove the air.
  • Divide into two equal parts.
  • Dust with flour and roll out each portion into about 10'' diameter and 1/4 '' thickness. You can even pat the dough with your hands instead of rolling.
  • Repeat the same for the other. Prick holes on the base as shown above.
  • Preaheat oven at 180 deg for 10 minutes.
  • Arrange the base in a  greased and dusted pan and bake for 5 - 7 minutes.
  • After 7 minutes, remove the pan and spread the sauce on top.
  • Then spread a layer of the veggies and top it up with cheese and oregano.
  • Sprinkle pepper powder.
  • Put it back in the oven and bake for another 10 - 12 minutes or until the cheese on top gets browned as shown in the pic above.
  • Repeat the same for the other base as well. 
  • Your delicious pizza is ready for grabs...Serve hot for best results.
Note:
  • If you want a thinner base then use half the quantity of the ingredients and follow the procedure as per the recipe.
  • If you do not get oregano, you can garnish with dry pudina or coriander. but it will not give the original flavour.
  • You can use single coloured capsicum as well.
  • Store bought puree can be used.
  • Pan should be medium sized one, otherwise it will not cook properly.
