Cauliflower Rice

Winter is here and so are the veggies of winter. Cauliflower is our favourite among them. I always wanted to make a rice with cauliflower but never had an idea of how to go about it. i surfed on the net and came accross many recipes. This one is a combination of various recipe reads and my ideas. Hope you like it :)
Ingredients:
Cauliflower - I medium size
Onion - 2 finely chopped
Tomato - 1 
Cardamom - 1 
Cloves - 3 nos
Saunf - 1/2 tsp 
Garlic - 4 flakes
Turmeric powder - 1/4 tsp
Kashmiri red chilli powder - 2 tsp
Pav Bhaji masala powder  - 2 tsp
Oil - 2 1/2  tsp
Jeera - 1 tsp
Coriander Leaves - For garnish
Salt - as per required

Method:
  • Wash and soak rice for half an hour. After half an hour, cook it until half cooked. Strain and keep aside.
  • Cut cauliflower into medium size florets. 
  • Boil water with turmeric and salt. Once it boils well, switch off flame.
  • Add the florets into the water, cover and keep for 10 mins.
  • After 10 mins, strain the florets.
  • Heat  1 tsp oil in a pan add the florets, chilli powder and turmeric powder and fry well till its cooked.
  • Do not over cook the florets, they should remain crunchy.
  • Once they are done transfer into a plate and keep aside.
  • In the same pan heat 1 tsp oil add the cloves, cardamom, saunf, chopped onion and garlic and fry well.


    • When the mixture cools down, grind it to a smooth paste adding very little water.
    • Take 1/2 tsp oil in a pan,add jeera and when it crackles the paste and chopped tomatoes.
    • Fry well for 2- 3 minutes.
    • When the it becomes semi dry add the pav bhaji masala and fry again for few seconds.
    • Add the cauliflower florets and mix well until the gravy evenly coats the florets. 
    • Now the mixture would have become completely dry.
    • At this stage check for salt and add the cooked rice.
    • Mix gently and Serve hot garnished with coriander leaves with a raita of your choice as accompaniment.
    Note:
    • Do not over mix the rice, else it will break and stick to each other.
    • You can alter the oil and spice measurements as per your taste.
    • I served it with cucumber  and ginger raita.
    • For the cucumber and ginger raita: Peel two cucumbers and grate them and set aside. Lightly whisk curd/yoghurt. Add grated ginger, chaat masala,salt and chopped chillies to this and mix well. Add the grated cucumber,salt to this and mix well.Garnish with finely chopped coriander leaves.
