Another year comes to an end!! This year was special...My dream of starting a blog came true. As we begin a new year and a new chapter let us all pray and hope that 2015 will be filled with Happy and Fun filled Moments :) Keep encouraging and trying out our recipes....We will try our level best to keep up to your expectations :) Let us start this year with a sweet and a healthy cake. This cake was introduced to me by my Dear friend Jayashri Baleri. A cake that can be eaten guilt free...very healthy, easy to make and delicious. HAPPY NEW YEAR :)
Ingredients:
Wheat Flour - 2 cups
Banana - 3 big
Light Brown Sugar - 3/4th cup
Almonds/Badam - 1/4 cup roughly chopped
(or any other nuts of your choice)
Sour Cream or yogurt - 1/2 cup
Milk - 1/2 cup
Olive Oil - 1/4 cup
Vanilla Extract - 1 tsp
Baking Soda - 3/4 tsp
Baking Powder - 1/4 tsp
Ground Cinnamon/Dalchini Powder - 1/4 tsp
Ground Nutmeg/Jaiphal Powder - 1/8 tsp
Salt - 1/4 tsp
Milk - 1/2 cup
Olive Oil - 1/4 cup
Vanilla Extract - 1 tsp
Baking Soda - 3/4 tsp
Baking Powder - 1/4 tsp
Ground Cinnamon/Dalchini Powder - 1/4 tsp
Ground Nutmeg/Jaiphal Powder - 1/8 tsp
Salt - 1/4 tsp
Almond Slivers - 2 tsp for garnish
Method:
- In a small bowl mix all the dry ingredients i.e wheat flour, baking powder, baking soda, chopped almonds,sugar,cinnamon and nutmeg powder, raisins, salt well and keep aside.
- In a big mixing bowl add the bananas and mash well.
- Then add oil, vanilla extract, yogurt/sour cream, milk and mix well.
- Add the dry ingredients to this and mix to form a lumpy batter. Do not over mix.
- Preheat oven at 350 deg F/ 180 deg C for 10 mins.
- Grease and dust a deep cake pan.
- Pour the batter in the pan and pat the tin so that the batter spreads and settles down evenly.
- Garnish with almond slivers.
- Bake for 25 - 30 mins. Insert a tooth pick and if it comes out clean then the cake is done. If not bake for some more time.
- Switch off oven and remove pan.
- Let the cake cool in the pan for 5 minutes. Then transfer to a wire rack and let it cool for another 10 mins or more.
- Once cooled, slice cake and serve with a hot cup of coffee :)
Note:
- You can use any other oil instead of olive oil.
- You can also alter the level of sugar as per your taste.
- White sugar can be used instead of brown. But care should be taken regarding the measurements used because white sugar is sweeter than the brown.
