Cucumber Vadas

Cucumber vadas ,very easy and quick to make. Perfect evening snack. These are deep fried hence calories are high. But I believe that one can treat oneself once in a while :) I learnt this from one of the senior member of our food group Veena Mallaya.

Cucumber is a good source of Vitamin B. It re hydrates the body and replenishes the vitamins. it is good for the skin and hair. whenever your eyes feel tired, just lie down for 10 minutes with two slices of cucumber on them. You will feel refreshed.



Ingredients:

Servings - 12 medium sized vadas

Cucumber - 2 nos
Rice powder - 1/4 cup
Coconut - 2 tbsp
Green Chillies - 4 nos (I used the medium spicy ones)
Oil - for frying
Salt - to taste
Method:
  • Wash, peel and finely grate cucumber and keep aside.
  • Coarsely grind coconut and green chillies. Do not add water while grinding.
  • Add this ground paste and salt to the grated cucumber and mix well.
  •  Drop in the rice flour little by little and start binding.
  • There is no need to add extra water, as cucumber leaves water, sufficient enough for binding.
  • Take a plastic / parchment sheet. 
  • Grease your palms with oil. 
  • Place a small portion of the mixture on the sheet and lightly flatten and shape them into small discs.
  • Deep fry them in medium hot oil.
  • Care should be taken not to over heat the oil, else the vadas will be half cooked
  • Serve these vadas hot with green chutney.

For the Green Chutney: Take a handful mint and coriander leaves. Grind them along with ginger, green chillies and curd/yogurt. Add chat masala and mix well.


Note: 
  • Care should be taken not to make the batter watery. If it becomes watery it will be difficult to shape the vadas and they will become too oily too.
  • Do not add excessive rice powder. This will overpower the taste of the cucumber.
  • So if you feel that the cucumber has left a lot of water. Drain out some water and before adding the paste and rice powder.
  • Make vadas immediately, otherwise the batter will be too watery and difficult to shape into vadas.

  1. very nice recipe I wonder if one could shallow fry it on a tava to avoid excess oil?

    1. Yes Kasturiakka, it is possible to tava fry them. For that you will have to squeeze out all the water from the cucumber and make it dry. Then make a stiff dough. Then pat into thin vadas ( like rontoso) and fry. They taste like bhakri.
