Tofu Burji /Scrambled Tofu

Tofu, made from soybean curds, is naturally gluten-free and low calorie, contains no cholesterol and is an excellent source of protein, iron, and calcium. It is available in different varieties super firm,soft and silken. It helps in reducing LDL cholesterol, good for diabetic patients, helps in weight loss and regular consumption reduces risk of osteoporosis.

Tofu Burji is nothing but scrambled tofu. It is a complete meal in itself. You can also use this as a filling for sandwiches and rolls. An excellent idea for kids tiffin boxes.



Ingredients:
Servings : Family of 4
Super Firm Tofu - 1 big block scrambled
Onion - 1 big chopped
Carrot - 1 medium chopped
Capsicum -  1 medium chopped
Tomato - 1 small chopped
Garlic - 3 pods fine chopped
Ginger - 1" piece chopped
Jeera - 1 tsp
Subzi masala - 2 tsp
(I use eastern brand)
Kashmiri chilli powder - 1 tsp
Haldi powder - 1/4 tsp
Salt - as per taste
Sugar - a pinch
Oil - 1 tsp
Coriander leaves - chopped for garnish
Method:
  • Remove tofu from the packet, wash well and keep it in a strainer so that it becomes dry.
  • Once its dry scramble it and keep it aside.
  • Heat oil in a pan and add jeera.
  • Once it crackles add the chopped ginger, garlic and onion and fry well.
  • Once the onions become golden brown add the chopped tomato, salt and cook till it becomes supple.
  • Now add the chilli powder,haldi, subzi masala and mix well.
  • Drop in the chopped carrots and once they are half cooked add the capsicum and cook till done. 
  • Do not overcook the veggies, let them remain a little crunchy.
  • Stir in the scrambled tofu and mix well till its well coated and all the excess water if any dries up. Check for salt.
  • Switch off flame,garnish with coriander leaves and serve hot.

Note:
  • If you do not like tofu you can replace it with paneer.
  • You can use pav bhaji masala instead of subzi masala.
Tofu Burji Sandwich:
  • Take a Bread slice ( I used multi grain), apply a thin layer of tomato ketchup.
  • Spread a lavish portion of the burji and grill in a sandwich maker.
  • If you are serving it to the kids,you can coat the top and bottom portion of the sandwich before grilling,with butter. This will make it tastier.
