Eggless Prune, Coffee And Walnut Cake

Its The Big 1....Cooking is my passion and I had always dreamt of starting a food blog...but never expected that it would turn into reality....Yes!! Exactly this day last year my dream came true.I had to choose a special day to launch my dream. May 24th was the D Day...It happens to be a special person's big day too, without whose unconditional support this dream would have remained a dream forever.

Eggless Butterless Prune,Coffee and Walnut cake...A very healthy and nutritious cake. The original recipe calls for Dates but just to cut down on calories I have replaced dates with prunes and made it sugarless too.Recipe is adapted from Here
Ingredients:
Whole wheat flour - 1 1/2 cups
All purpose flour - 1/2 cup
Olive/ sunflower oil - 1/2 cup
Cane sugar - 1/2 cup 
(I skipped using it)
Milk- 1 cup
Water - 1 cup
Prunes - 1 cup 
(deseeded and chopped)
Walnuts - 1/2 cup chopped
Instant Coffee - 2 tsp
Vanilla essence - 1/2 tsp
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Salt - A pinch
Method:
  • Wash prunes,deseed, roughly chop and keep aside. Chop walnuts too.
  • Heat milk, add the coffee powder and mix well.
  • Soak the prunes in the above mixture and keep aside for 15-20 minutes. This is done to soften the prunes.
  • Meanwhile in a big bowl sieve all the dry ingredients ( wheat, all purpose flours, baking powder and soda and salt together..
  • Add all the soaked prunes, water, sugar and vanilla essence to the sieve flour mixture and beat well with an electric beater until the batter gets mixed uniformly. Do not overbeat.
  • Pre heat the oven for 10 mins at 200 deg c
  • Grease a cake pan with oil and dust with flour.
  • Pour in the cake mix into the pan and pat the pan to spread the mixture uniformly.
  • Bake for 35 - 40 minutes.
  • Check in between using tooth pic or cake tester. If the tooth pick / tester comes out clean the cake is done. Mine got done in 35 mins
  • Once its done let it cool completely on a wire rack.
  • Once cool, cut and serve with hot tea.
Note:
  • Baking time depends on the power of your oven.
  • Chop all ingredients uniformly for best results.
  • I avoided adding sugar to the recipe because the prunes were extra sweet ones.
  • You can add sugar and alter levels as per your taste.
