Flat Beans(Paapdi),Carrot Garlic Rice

August 15th, the day India got independence and the day all of us were granted freedom. Proud of my nation...Proud to be an Indian. Today as India celebrates its 69th independence day, a small dedication from our side to show our love and gratitude towards our motherland. Flat beans carrot garlic rice is a simple and easy to make recipe. We have incorporated the three colours( saffron, white and green) of our national flag in this dish. Vande Mataram!!


Ingredients:
Servings: 4
Cooked Rice - 1 1/2 cups
 Flat beans - 1/4 kg
Carrot - 3 medium
Garlic - 6 cloves (small ones)
( large cloves- 3-4 nos)
Red chilli flakes - 2 tsp
Salt- as per taste
Jeera - 1 tsp
Curry leaves - 1 sprig

Method:
  • Cook rice, drain and keep aside.
  • Clean, chop the ends and cut flat beans into 1" pieces
  • Peel and cut carrot into thin semi circles as shown in the pic above.
  • If you are using large garlic pods then you need to cut it into thin roundels. but if they are small pods you can just peel and use the whole pods as it is.
  • Heat oil add jeera, once it crackles add curry leaves, red chilli flakes and garlic and fry well.
  • Drop in the flat beans and carrot. Add salt, sprinkle some water and keep on low flame,covered till the veggies get cooked.
  • Do not overcook them. Let them retain mild crunchiness.
  • Once the veggies are cooked, add the cooked rice and mix gently.
  • Do not over mix else the rice will break.
  • Check for salt.
  • Rice is ready to be served.
Note:
  • Do not overcook the rice.
  • Jeera is a very important as it helps in enhancing the garlic flavour.
  • You can increase the quantity of garlic if you like the taste. But do not reduce the quantity else the rice will lose its flavour and become bland.
